Rye Whiskey Made Right Here, By Us.
100% grain-to-glass, 100% malted rye whiskey. Aged in charred new white american oak barrels.
Our Process:
Our distillers mash rye malt, thus extracting and converting the starches into simple sugars.
We open-ferment the resulting wort for about a week.
We then distill all of the resulting beer into a raw distillate that we call “low wines”
Next we distill the low wines one more time, slowly and carefully. The operating distiller will use his refined senses to decide which parts of the resulting distillate will be kept.
The resulting spirit that our distiller has deemed the highest quality, will then be “proofed” to our barrel strength (120 proof) and then stored in either a 10, or 30 gallon new american oak barrel!
The whiskey will then age in the barrel until the distiller has deemed the product “mature” for consumption
Finally, the resulting whiskey will be poured out of the barrel, “proofed” to bottle strength (90 proof), and then bottled for your consumption!
